When you have something delicious planned for breakfast, it makes getting up so much easier.
Not that I need too much encouragement these days – Summer is in full swing and it’s wonderful! But as a food-motivated person (is that just a term that should be applied to dogs? I’m not sure…), when I know I have something tasty to look forward to in the morning, I’ll pretty much leap out of bed when the alarm goes!
Especially when no guilt is involved.
Yeah, I’m not even talking about using the (delicious but so so bad) fry ups or buttermilk pancakes as motivation… although I wouldn’t say no right now. I’m talking about some healthier options that are not only delicious, but refreshing and good for ya!
1. Banana ‘Nice Cream’ with Fruit (Vegan)
I’m totally into the ‘nice cream’ trend right now. It’s so simple and easy, and it feels pretty cool and rebellious to be eating what really tastes like ice cream for breakfast.
You simply chop up a ripe banana, put it in the freezer overnight, the blend it until it’s an ice cream consistency in the morning.
Here I’ve added some chopped strawberries and also drizzled some Clarks Date Syrup* over the top too, for an extra sweet fix!
2. Muesli and Berries with Almond Milk (Vegan)
Can you tell I’m loving strawberries at the moment? It’s definitely the best thing about Summer breakfasts!
This simple breakfast idea is my go-to at the moment because it takes seconds to make, and contains a good mix of sweet stuff, fibre, and calcium from the almond milk.
3. Two-ingredient Pancakes with Blueberries (Vegetarian)
Look, it’s really difficult to make these pancakes look photogenic, ‘kay!
They may not look appetising, but I promise they are delicious. So delicious that – fun fact- Olivia from Oliviablogs.com eats them every day for breakfast! She recently reminded me how tasty they were so I attempted to make them without failing, but I still kind of failed as you can see…
Nothing that can’t be salvaged by a generous drizzle of that Clarks syrup* again though! They’re pretty sweet as they are, but I am really loving this stuff at the moment – it’s a great natural sweetener to use as an alternative to refined sugar or sauces full of random preservatives, plus dates are super yummy!

* Disclaimer: I was gifted the Clarks syrup, but I wouldn’t feature it here if I didn’t actually love it! Also, please note that these breakfast ideas (although low in fat) are all quite sugary, so eat in moderation!
Yum! I lived off 2 ingredient pancakes when I was at uni, but I’m still yet to make nicecream, might pop a banana in the freezer now. Whenever I have a black banana but no time to make banana bread, I always freeze them as they then keep until I’m ready to bake and work just as well once defrosted! Alice xx

Great idea! I suck at baking so I’ll leave that to you :P definitely try some banana nice cream though – it’ll give you a crazy sugar crash but it’s worth it haha x
I’ve not tried the whole frozen banana thing but it really does sound amazing! We keep buying ice cream this week cos it’s been so hot but the frozen banana would be a much healthier option!
To be fair I still buy ice cream too… good to have a balance ;)
