Favourite Summer Cocktail with a Twist

Nothing screams summer like getting the cocktails on the go on a sunny (or even not so sunny!) evening with the girls.

Admittedly, August has been less than great over the past couple of weeks; whether it’s been freak floods or random hurricanes, it’s living up to its reputation of being the worst weather month here in Cornwall for sure!

But that hasn’t stopped us! My friends and I have been trying to get out as much as possible to enjoy the slightly-warmer-than-average temperatures, and with a few nights out and an epic weekend at Boardmasters festival, we’ve been enjoying a few cocktails to get us through!

I’ve never been brilliant at mixing drinks and creating cocktails, so I tend to stick to the simpler concoctions. However I’ve been using thebar.com for inspiration lately as their summer cocktail ideas and recipes are super simple to follow, and they have some of my favourites listed on there!

Mojito recipe

My favourite cocktail has always been a classic mojito; the most famous rum-based Cuban highball. However, recently I’ve been enjoying it with a little twist, and instead of soda water, I’ve been adding ginger beer!

Rum and ginger seems like a popular drink in itself at the moment, but with a little bit of added sugar syrup, crushed lime and sprigs of mint, it becomes the ultimate way to sip through summer.

We used Captain Morgan’s caribbean white rum and some Old Jamaica ginger beer for this cocktail and it worked a treat! I followed to mojito recipe on thebar.com (just switching out the soda!) and it couldn’t have been easier. It also got my friends’ seal of approval too ;)
