Pinterest Pancakes

I’m always wary of recipes I find on Pinterest. The photos look delicious, but the actual results are often questionable, so I like to try them out before exposing them to other people…

I’ve seen people pin this simple pancake recipe over and over and, armed with the necessary 3 ingredients, I thought the run up to Shrove Tuesday would be the perfect time to test it out.

Yes, that’s right. This recipe includes no flour, no butter and no milk. Just eggs, bananas, and blueberries (which are actually optional). It’s an easier, cheaper and healthier version of real pancakes, and I was pretty keen to work out if it would work or not.

After mushing up 2 bananas and 2 eggs in a bowl (one of each per person), I poured the mixture onto the hot frying pan into the sort of size/shape you’d want for American style pancakes, and sprinkled it with blueberries.

All was going well, until I tried to flip it. Whilst waiting for the middle to cook or at least solidify so that I could flip the darn thing, the sides started burning, so I gave up and just flipped different bits while it fell apart.

This happened on the next one, and the next one, and the next one. Everything was cooked, but they were just too moist to pick up all in one go. Unfortunately, it didn’t look very appetising.

However, they tasted amazing! Hot blueberries are more awesome than I expected, and in my opinion, these tasted better and were more satisfying than normal pancakes. The banana makes it so sweet that, admittedly, you probably don’t need to add maple syrup like I did, but hey. It’s just a shame they didn’t stick together very well.

Just try not to think of it as a banana omelette (which it is…), because that’s kind of off-putting.

 

*NOTE: Add a sprinkle of cinnamon to the mixture before you pour it in the pan. It brings out the sweetness of the banana but doesn’t add any calories.

  1. Darn pinterest, I am always trying to make new recipes that I find on there and they never ever look like the photo that I pinned, haha sucks! But at least these were good! I want pancakes now :D

    1. They did taste amazing, but I was so determined to make them look nice for a ‘success’ photo :( Is it still a success if they taste amazing and I want to make them again? x
